Scallion Ginger Oil

This aromatic scallion and ginger oil can be used on many things. I frequently use this when making ramen. *Note: To get the amount of oil I used here, I filled the mason jar I would store this in with oil and then poured that into the pot. I used a quarter pint mason jar here.

Ingredients

  • 2 knobs ginger
  • 1 bunch scallions
  • ~4oz oil *See note.

Directions

  • Prepare ginger by removing skin with spoon and then slicing medium strips
  • Trim ends off scallions and then rough chop into about 3/4in pieces
  • Place oil into pot (See note for the amount used)
  • Add scallions and ginger to pot.
  • Cover and cook at medium heat for about 12 minutes.
  • Set aside to cool completely
  • Strain and transfer to mason jar, and refriderate. This should keep for a few months.
